Very quick and easy to make. Delicious to eat. One of my family's favorite cookies.

Ingredients

  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup shortening
  • 1 stick margarine
  • 1/4 cup sugar
  • 3/4 cup brown sugar, firmly packed
  • 1 box pistachio instant pudding
  • 1 teaspoon vanilla
  • 2 - eggs

How To Make pistachio cookies

  • Step 1
    Mix flour and baking soda and set aside. Cream together: shortening, margarine, sugars, pudding, and vanilla. Add eggs and mix well. Gradually add dry ingredients. Mix until well blended. Drop by teaspoonful onto ungreased cookie sheet.(I use parchment paper). Bake at 375 degrees for 8 to 10 minutes until lightly browned.
