Ingredients
- 1 cup softened unsalted butter
- 1/3 cup confectioners' sugar
- 1 - egg
- 1 teaspoon vanilla extract
- 3/4 teaspoon almond extract
- 2 cups flour
- 1 package instant pistachio pudding mix
- 1/2 cup miniature chocolate chips
- 2 cups pistachios, finely chopped
How To Make pistachio cookies

Step 1Preheat oven to 350 °

Step 2Cream butter and sugar until smooth. Add egg and extracts and mix well. Combine flour and pudding mix and add to creamed mixture. Stir in chocolate chips.

Step 3Shape into 1" balls and roll in chopped nuts. Place 2" apart on ungreased cookie sheets.

Step 4Bake for 10-12 minutes. Remove to a wire rack to cool.
