1 csoftened unsalted butter
1/3 cconfectioners' sugar
1 tspvanilla extract
3/4 tspalmond extract
1 pkginstant pistachio pudding mix
1/2 cminiature chocolate chips
2 cpistachios, finely chopped
How to Make Pistachio cookies
- Preheat oven to 350 °
- Cream butter and sugar until smooth. Add egg and extracts and mix well. Combine flour and pudding mix and add to creamed mixture. Stir in chocolate chips.
- Shape into 1" balls and roll in chopped nuts. Place 2" apart on ungreased cookie sheets.
- Bake for 10-12 minutes. Remove to a wire rack to cool.
