Ingredients
- 1 cup pistachio nuts, chopped
- 3 1/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 8 tablespoons butter, softened
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 10 ounces Ghirardelli dark chocolate melting wafers
How To Make pistachio biscotti

Step 1In a dry skillet, toast the pistachios for about 5 minutes over medium-high heat. Let them cool, then chop them.

Step 2Mix the dry ingredients - flour, baking powder, and salt in a small bowl. Set aside.

Step 3Cream the butter and sugar in a stand mixer. Add the vanilla, then the eggs one at a time until very well blended.

Step 4Mix in the flour mixture and then fold in the pistachios.

Step 5Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Divide the dough in half and roll into 2 logs about 4 inches wide.

Step 6Bake for about 30 minutes.

Step 7Remove from oven and cut into pieces.

Step 8Place back in the oven for about 20 more minutes.

Step 9Meanwhile, melt the chocolate in the microwave.

Step 10Remove the biscotti from the oven, let cool about 10 minutes.

Step 11Then dip them into the chocolate and let them cool completely.
