Wow, these cookies were always a favorite of mine. I love making them due to the smell of the almond paste. We always made these with a nice glass of wine on hand or two or three....lol.

Ingredients
- 7 ounces almond paste (coarse)
- 3/4 cup sugar
- 2 large egg whites
- 1 tablespoon almond extract
- 1/4 cup pine nuts or more if desired
How To Make pinoccate-(pine nut cookies)

Step 1Preheat oven to 375 Beat together almond paste and sugar until well combined. Beat egg whites until very frothy. Add paste mixture to the whites and beat for 2-3 minutes. Drop dough onto buttered cookie sheet 2" apart. Press pine nuts into dough, making sure you have a good amount on each cookie. Bake 15 minutes or until edges start to turn a light brown. Cool on a rack.
