Pineapple Cookies are a nice change from the usual Chocolate or Oatmeal cookies.

1 cup shortening
1 cup sugar
1 cup brown sugar
1/2 teaspoon salt
2 teaspoons vanilla
2 large eggs..well beaten
4 cups flour
1/2 teaspoon baking soda
2 teaspoons baking powder
1 cup crushes pineapple..drained
1 cup crushed walnuts

How To Make pineapple nut cookies

Step 1

Preheat oven 350. Combine shortening, sugars, salt, vanilla and eggs;beat thoroughly. Sift flour with soda and baking powder;add to creamed mixture. Add crushed pineapple and nuts;mix thoroughly. Drop rounded Tablespoons of dough onto greased baking sheet. Bake 10-12 minutes.
