pineapple macadamia cookies
I got the basic recipe from sallysbakingaddiction, but starting experimenting with different cake mix flavors and additions. Use your imagination!

Ingredients
- 1 box 15.25 or 18.25oz pineapple flavored cake mix
- 1 teaspoon baking powder
- 2 large eggs
- 1/3 cup vegetable or canola oil
- 1/2 teaspoon vanilla extract
- 1/2 cup macadamia nuts, chopped
- 1/2 cup flaked, sweetened coconut
- 1/2 cup vanilla or white chocolate chips
How To Make pineapple macadamia cookies

Step 1Preheat oven to 350 degrees. Line baking sheets with parchment paper.

Step 2In a large bowl, mix cake mix and baking powder together. In a small bowl, mix eggs, oil and vanilla. Stir into cake mix to form a dough until all dry pockets are mixed. Gently mix in nuts, coconut and chips.

Step 3Form a round ball with 2 tablespoons dough. Place on cookie sheet about 2 inches apart. You will only be able to get 6 cookies on each sheet. Bake 10 minutes, do not let cookies get brown. Cool on cookie sheet 3 minutes before transfering to a wire rack to cool completely.

Step 4Store in airtight container for up to one week.
