This recipe is a little different from the norm, but if you like pineapple like I do, you will love it. I always keep a can of pineapple in my cupboard because it is used in so many things. I hope you will enjoy this recipe

Ingredients

  • 1 (8oz) can(s)
    crushed pineapple with juice
  • 2 c
    all purpose flour
  • 1/4 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 c
    shortening, butter flavor
  • 1 c
    brown sugar, packed
  • 1/2 c
    granulated sugar
  • 1 large
    egg
  • 1 tsp
    vanilla extract

How to Make Pineapple Cookies

Step-by-Step

  1. Combine pineapple with juice, beaten egg, shortening and both sugars. Mix well, stir in vanilla. Combine soda, baking powder, salt and flour. Sift into pineapple mixture. Drop by teaspoons on lightly greased and floured cookie sheet. Bake at 400 degrees for 8 minutes or until lightly brown on top
