This recipe is a little different from the norm, but if you like pineapple like I do, you will love it. I always keep a can of pineapple in my cupboard because it is used in so many things. I hope you will enjoy this recipe

Ingredients
- 1 (8oz) can crushed pineapple with juice
- 2 cups all purpose flour
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup shortening, butter flavor
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
How To Make pineapple cookies

Step 1Combine pineapple with juice, beaten egg, shortening and both sugars. Mix well, stir in vanilla. Combine soda, baking powder, salt and flour. Sift into pineapple mixture. Drop by teaspoons on lightly greased and floured cookie sheet. Bake at 400 degrees for 8 minutes or until lightly brown on top
