These were always my Grandpa Widmer's favorite cookie. My grandma made them for him often. They are a very moist cookie with a lot of pineapple flavor. Quick, easy and made with ingredients we all usually have in our pantry!

Ingredients For pineapple cookies

  • 1 c
    brown sugar
  • 1 c
    granulated sugar
  • 1 c
    butter or margarine
  • 2
    eggs
  • 1 can
    crushed pineapple (drained) (large)
  • 1 tsp
    vanilla
  • 4 c
    flour
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • 1 c
    chopped nuts ( if desired)

How To Make pineapple cookies

    Cream the sugars and butter well, then add the eggs and beat well.

    Next add the drained pineapple and vanilla.

    Sift the flour, soda and salt together. Then mix with the rest of the ingredients.

    Drop by teaspoonfuls on a greased cookie sheet and bake for 12 to 15 minutes at 375 degrees.

    When completely cool, drizzle with powdered sugar icing for an extra treat!
