pineapple cookies
Being an empty nester, I needed to find something to help me feel needed...this recipe was just sitting there, unloved and unwanted, so i adopted it... will be giving it some tender loving care over the next few days, want to look it over and see what I can do to make it more lovable...stay tuned, it's going to be an amazing creation!!

Ingredients
- 1/4 cup mashed bananas
- 1/4 cup pineapple juice concentrate
- 1/4 cup vegetable oil
- 1 large egg
- 1 tablespoon milk
- 1 cup all purpose flour
- 1/4 teaspoon baking soda
- 1/2 cup shredded coconut
- - grated orange rind
How To Make pineapple cookies

Step 1Preheat oven to 350°F. Lightly oil cookie sheets.

Step 2Mash ripe banana with a fork to measure 1/4 cup.

Step 3Beat together banana, pineapple juice concentrate, oil, egg and milk until creamy.

Step 4Combine flour, baking soda and flaked coconut. Add gradually to creamed mixture.

Step 5Beat well and drop by rounded teaspoonfuls onto baking sheets. Sprinkle tops of cookies with the grated orange rind.

Step 6Bake for 8 minutes, or until just brown around the edges and firm to the touch.

Step 7Remove from cookie sheets and cool on wire racks.
