Being an empty nester, I needed to find something to help me feel needed...this recipe was just sitting there, unloved and unwanted, so i adopted it...
will be giving it some tender loving care over the next few days, want to look it over and see what I can do to make it more lovable...stay tuned, it's going to be an amazing creation!!

Ingredients

  • 1/4 c
    mashed bananas
  • 1/4 c
    pineapple juice concentrate
  • 1/4 c
    vegetable oil
  • 1 large
    egg
  • 1 Tbsp
    milk
  • 1 c
    all purpose flour
  • 1/4 tsp
    baking soda
  • 1/2 c
    shredded coconut
  • ·
    grated orange rind

How to Make Pineapple Cookies

Step-by-Step

  1. Preheat oven to 350°F. Lightly oil cookie sheets.
  2. Mash ripe banana with a fork to measure 1/4 cup.
  3. Beat together banana, pineapple juice concentrate, oil, egg and milk until creamy.
  4. Combine flour, baking soda and flaked coconut. Add gradually to creamed mixture.
  5. Beat well and drop by rounded teaspoonfuls onto baking sheets. Sprinkle tops of cookies with the grated orange rind.
  6. Bake for 8 minutes, or until just brown around the edges and firm to the touch.
  7. Remove from cookie sheets and cool on wire racks.
