Grandma made these every year at Christmas, although we begged for them all year round. Now it's my childrens turn to ask, at least twice a month for them.

  • 1/2 lb
    cream cheese (softened)
  • 1/2 lb
    butter (softened)
  • 2 c
    all purpose flour
  • 1
    egg yolk
  • 1 tsp
    lemon juice
  • ·
    lekvar (prune butter)
  • ·
    preserves (your favorite)
  • ·
    confectioners' sugar

How to Make Philly Blankets

  1. Cream together cream cheese, butter and egg yolk.
  2. Knead in flour 1/2 cup at a time. Add lemon juice. Continue until rolling consistency.
  3. Flour flat surface. I pull dough apart into softball size pieces(makes it easier to handle). Roll out to approximately 1/4 in thickness. Use either round cookie cutter or round drinking glass to cut out cookies.
  4. In the center of each cookie drop a tablespoon of preserves or lekvar. Fold cookie and press edges with fork.
  5. Bake at 350 degrees for 8-10 minutes on an ungreased cookie sheet.
  6. Cool and sprinkle with powdered sugar.
