perfect white chocolate macadamia nut cookies

I originally got this recipe from a Better Homes and Gardens cookie catalog, they are so good I just had to share. This recipe works just as well with chocolate chip pecan cookies as well.

Ingredients

  • 1/2 cup butter (i do not recommend substituting margarine)
  • 1/2 cup vegetable oil
  • 1 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 - eggs
  • 1 teaspoon vanilla
  • 2 3/4 cups all-purpose flour
  • 12 ounces white chocolate chips
  • 3 1/2 ounces macadamia nuts, chopped

How To Make perfect white chocolate macadamia nut cookies

  • Step 1
    Preheat oven to 375 degrees. DO NOT grease cookie sheets.
  • Step 2
    In a large bowl beat butter and oil with an electric mixer on medium high speed until it is well mixed. Add both sugars, baking soda, and salt and beat until it is combined. Beat eggs and vanilla until combined. Beat in as much of the flour as possible one cup at a time. (for me it was approx. 1 cup). Stir in the remaining flour. Gently stir in the chips and nuts until it is well distributed. Cover and chill approx 20 minutes, it will be workable. Roll into 1 1/2 inch balls and place on un-greased cookie sheet about 2 inches apart. Bake 9 minutes or until the edges start to turn golden brown. Let cool a few minutes on the cookie sheets before transferring them to wire cooling racks.
  • Step 3
    Note : If you don't want to take the extra time to roll the cookies just drop them onto the un-greased cookie sheets with a spoon. I like rolling them because it makes a prettier cookie. :)
