Ingredients

  • 1 cup butter, or margarine
  • 1/2 cup brown sugar, firmly packed
  • 2 - egg yolks
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 2 - egg whites, slightly beaten
  • 2 cups chopped, salted, peanuts
  • FILLING
  • 1/2 cup peanut butter
  • 1/2 cup apple jelly

How To Make peanut crunchies

  • Step 1
    Cream butter and sugar. Beat in egg yolks and vanilla. Sift flour and salt together. Stir into sugar mixture.
  • Step 2
    Shape dough into 1 inch balls. Dip in slightly beaten egg whites, roll in peanuts, and place on ungreased baking sheet.
  • Step 3
    Bake in preheated (375 F) oven 5 minutes. Remove from oven; press thumb gently into top of each cookie. Return to oven for 8 minutes.
  • Step 4
    Cool cookies. Mix filling ingredients together. Fill cookies with peanut-jelly filling.
