Ingredients
- 1 cup butter, or margarine
- 1/2 cup brown sugar, firmly packed
- 2 - egg yolks
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1 teaspoon salt
- 2 - egg whites, slightly beaten
- 2 cups chopped, salted, peanuts
- FILLING
- 1/2 cup peanut butter
- 1/2 cup apple jelly
How To Make peanut crunchies

Step 1Cream butter and sugar. Beat in egg yolks and vanilla. Sift flour and salt together. Stir into sugar mixture.

Step 2Shape dough into 1 inch balls. Dip in slightly beaten egg whites, roll in peanuts, and place on ungreased baking sheet.

Step 3Bake in preheated (375 F) oven 5 minutes. Remove from oven; press thumb gently into top of each cookie. Return to oven for 8 minutes.

Step 4Cool cookies. Mix filling ingredients together. Fill cookies with peanut-jelly filling.
