Ingredients

1 c
butter, or margarine
1/2 c
brown sugar, firmly packed
2
egg yolks
1 tsp
vanilla
2 c
all purpose flour
1 tsp
salt
2
egg whites, slightly beaten
2 c
chopped, salted, peanuts

FILLING

1/2 c
peanut butter
1/2 c
apple jelly

How to Make Peanut Crunchies

Step-by-Step

  • 1Cream butter and sugar.
    Beat in egg yolks and vanilla.
    Sift flour and salt together.
    Stir into sugar mixture.
  • 2Shape dough into 1 inch balls.
    Dip in slightly beaten egg whites, roll in peanuts, and place on ungreased baking sheet.
  • 3Bake in preheated (375 F) oven 5 minutes.
    Remove from oven; press thumb gently into top of each cookie.
    Return to oven for 8 minutes.
  • 4Cool cookies.

    Mix filling ingredients together.

    Fill cookies with peanut-jelly filling.
