How to Make Peanut Crunchies
1Cream butter and sugar.
Beat in egg yolks and vanilla.
Sift flour and salt together.
Stir into sugar mixture.
2Shape dough into 1 inch balls.
Dip in slightly beaten egg whites, roll in peanuts, and place on ungreased baking sheet.
3Bake in preheated (375 F) oven 5 minutes.
Remove from oven; press thumb gently into top of each cookie.
Return to oven for 8 minutes.
Mix filling ingredients together.
Fill cookies with peanut-jelly filling.
