peanut butter truffle cookies
My kids love these because they are so peanutty, chocolatey and soft. I love them because they are so easy to make.

Ingredients
- 1 cup brown sugar, firmly packed
- 1 cup peanut butter, creamy (not natural)
- 1 teaspoon baking soda
- 1 - egg
- 3/4 cup semi-sweet chocolate chips
How To Make peanut butter truffle cookies

Step 1Preheat oven to 400 degrees.

Step 2Line 2 cookie sheets with parchment paper. Do not grease.

Step 3In a large bowl, combine brown sugar, peanut butter, baking soda and egg. Mix well with spoon.

Step 4Stir in chocolate chips.

Step 5Using a tablespoon or a cookie scoop, drop cookies about 2 inches apart on cookie sheet.

Step 6Bake for 9 minutes exactly. Do not over cook. They may seem soft but they will firm up after cooling.

Step 7Let sit on cookie sheets for 5 minutes. Then transfer to a mesh cooling rack to cool completely.
