Makes about 3 dozen, depending on size

Ingredients

  • 3/4 c
    all-purpose flour
  • 1 1/2 c
    granulated sugar
  • 1/2 c
    butter
  • 1/2 c
    milk
  • 2/3 c
    peanut butter
  • 1 1/2 c
    quick-cooking rolled oats
  • 1/2 c
    chopped pecans
  • 1/2 c
    flaked coconut
  • 1/4 tsp
    salt
  • 1 tsp
    vanilla extract

How to Make Peanut Butter Quickies

Step-by-Step

  1. Line cookie sheets with aluminum foil or waxed paper. Lightly spoon flour into a measuring cup; level off. In a medium saucepan, combine flour, sugar, butter and milk. Bring to a full boil over medium-low heat. Boil vigorously for 3 minutes, stirring constantly. Remove from heat and stir in peanut butter; blend well. Add all the remaining ingredients, stirring to blend well. Cool slightly, then drop by spoonfuls onto lined cookie sheets. Cool completely.
