peanut butter quickies

This is another one of my Mother's recipes (as a lot of my favorites are)

yield Makes about 3 dozen, depending on size

Ingredients

  • 3/4 cup all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter
  • 1/2 cup milk
  • 2/3 cup peanut butter
  • 1 1/2 cups quick-cooking rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup flaked coconut
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

How To Make peanut butter quickies

  • Step 1
    Line cookie sheets with aluminum foil or waxed paper. Lightly spoon flour into a measuring cup; level off. In a medium saucepan, combine flour, sugar, butter and milk. Bring to a full boil over medium-low heat. Boil vigorously for 3 minutes, stirring constantly. Remove from heat and stir in peanut butter; blend well. Add all the remaining ingredients, stirring to blend well. Cool slightly, then drop by spoonfuls onto lined cookie sheets. Cool completely.
