peanut butter oatmeal rounds

This is a great all purpose cookie. Peanut Butter, Chocolate Chips and Oats all rolled into one. They have a good flavor that pleases everyone. I got this recipe from a cookbook that I absolutely loved, and lost in a housefire. Fortunately, I was compiling a cookbook of my own for my kids, and I had included this recipe! We love it!

Ingredients
- 3/4 cup butter
- 1/2 cup peanut butter
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 - eggs
- 1 teaspoon pure vanilla extract
- 1 1/4 cups all purpose flour
- 2 cups rolled oats
- 1 cup chopped peanuts, or chocolate chips
How To Make peanut butter oatmeal rounds

Step 1In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed about 30 seconds or until combined. Add granulated sugar, brown sugar, baking powder and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in rolled oats or peanuts.

Step 2Form tablespoons of dough into balls, place about 2 inches apart on an ungreased cookie sheet. Flatten each cookie slightly with the palm of your hand.

Step 3Bake in a 375 degree oven for about 10 minutes or until edges are lightly browned. Transfer cookies to wire rack and let cool.
