Original recipe is from Jif. The best peanut butter makes the best cookies. I swapped the milk for eggnog and I swear these are the best peanut butter cookies I've ever had. They're thin, crispy and chewy!! All the best!! The family agrees!!!

Ingredients

3/4 cup
jif creamy peanut butter
1/2 stick
crisco baking stick (1/2 cup crisco shortening)
1 1/4 cups
firmly packed brown sugar
3 tbsp
eggnog or milk
1 tbsp
vanilla extract
1 large
egg
1 3/4 cups
gold medal all purpose flour
3/4 tsp
baking soda
3/4 tsp
salt

How to Make Peanut Butter Cookies

Step-by-Step

  • 1Preheat oven to 375°F. Combine peanut butter, crisco, brown sugar, eggnog and vanilla in large bowl. Beat on medium speed till well blended. Add egg and beat till just blended. Do not overmix.
  • 2In separate bowl combine the flour, baking soda & salt. Add to peanut butter mixture till just blended on low speed. Uaing a 1 tablespoon scoop place cookies about 2" apart on baking sheet. Flatten slightly with fork tines in crisscross pattern.
  • 3Bake for 8 minutes. Cool a couple minutes on pan before moving to racks to cool completely.
  • 4Enjoy as is or sandwich with a chocolate ganache filling. Oh sooooo good!!!!
