This is another recipe that goes back to my childhood days and brings up wonderful memories of my Mother and how she always had fresh, home-baked goodies waiting for us when we got home from school.

Makes about 8 dozen
Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 - egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
How To Make peanut butter cookies

Step 1Preheat oven to 350 degrees and line a cookie sheet with parchment paper. (Just my preference)

Step 2In a mixing bowl, cream butter, peanut butter, granulated sugar and brown sugar.

Step 3Add vanilla and egg; beat until light and fluffy.

Step 4Sift flour and salt over the creamed mixture and blend into other ingredients thoroughly.

Step 5Form into 1 inch balls and place on prepared cookie sheet.

Step 6Press down the balls with the tines of a fork.

Step 7Bake in preheated oven for about 12-14 minutes, or just until golden brown.

Step 8It is a good idea to check bottoms of cookies for doneness before entire baking time is finished. These cookies will harden as they cool, and you don't want to overbake them!
