Ingredients
- 3 1/2 cups all purpose flour
- 2 cups old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups butter, unsalted, chilled, cut up
- 1 1/2 cups light brown sugar, packed
- 1 cup peanut butter, creamy
- 4 teaspoons pure vanilla extract
- 2 large eggs
- 3 cups honey roasted peanuts
- 2 - 10 oz. packages peanut butter chips
- 2 - 8 oz. packages toffee bits or 12 - 1.4 oz. heath bars, chopped
How To Make peanut butter brickle cookies

Step 1Whisk flour, oats, soda & salt in medium bowl.

Step 2Beat butter & brown sugar in a large bowl at medium speed 3 minutes or until light & fluffy. Beat in peanut butter & vanilla. Add eggs one at a time, beating just until combined. Stir in peanuts, chips & tiffee bits. Cover & refrigerate 2 - 3 hours or overnight, until firm enough to shape.

Step 3Preheat oven to 375 degrees F. Drop 1/4 C dough per cookie onto parchment paper lined baking sheets. Gently form into balls; flatten slightly to 1" thickness. Freeze dough on baking sheets 10 minutes or until firm.

Step 4Bake 10 - 12 minutes or until light brown on edges. Cool on baking sheet on wire rack 3 minutes. Place cookies on rack; cool completely. Enjoy!
