Mom has been making these during the Holidays for as long as I can remember. As soon as I was old enough to help in the kitchen I have been making them too!
In a medium bowl, beat together butter or margarine, peanut butter, brown sugar, 1/4c sugar, egg, vanilla and salt until light and fluffy.

Add flour and baking soda to mixture; beating until thoroughly blended.

Shape dough into 24 balls if you use a heaping tablespoon or 48 balls if you use a heaping teaspoon.

Roll balls in 3T of granulated sugar until coated. Place 1/2 to 1 inch apart on ungreased baking sheet (I prefer baking stones, make sure it is made in USA to avoid lead issues.)

Bake at 375F for 8-10 minutes or until light golden. Immediately top each cookie with a candy kiss, carefully pressing down firmly.

Remove cookies from baking sheets; cool on racks.
