I recently got into a cookie baking mood and I started playing around with different ingredient combinations. I'll admit that some of my creations were not as tasty as I had wished but, this Paradise Cookie turned into a keeper. I love all of the flavors separately and in combination. Give them a try. This recipe makes over 5 1/2 dozen 3-4 inch cookies.

Ingredients For paradise cookies

  • 4 1/2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 2 tsp
    salt
  • 1 1/2 c
    butter, softened
  • 1 1/2 c
    granulated sugar
  • 1 1/2 c
    brown sugar, packed
  • 2 tsp
    banana extract
  • 4 lg
    eggs
  • 1 c
    vanilla or white chocolate chips
  • 1 c
    coconut, shredded
  • 1 c
    dried pineapple, chopped coarsely

How To Make paradise cookies

    Combine Flour, Baking Soda and Salt in bowl and set aside.

    Beat Butter, Sugars and Banana Extract until creamy.

    Add eggs, one at a time, beating well after each addition.

    Gradually beat in flour mixture until all is added and it is well mixed.

    Add in White chocolate chips, coconut and pineapple stirring to combine.

    Drop by rounded tablespoon onto ungreased cookie sheet.

    Bake at 350 degrees, 10-12 minutes or until golden brown.

    Cool on baking sheet for 2 minutes and then remove to wire cooling rack to cool completely.
