orange "zookies"

These zesty little cookies (hence the name) are perfect for dessert or an after school snack. After they've cooled, place vanilla ice cream in between two and make a sandwich. Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • - pinch of salt
  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 - egg
  • 1/2 teaspoon pure orange extract
  • 1 teaspoon vanilla
  • - zest of 2 medium oranges (~ 1 tbsp)

How To Make orange "zookies"

  • Step 1
    Pre-heat oven to 350 degrees.
  • Step 2
    Sift flour, baking soda and salt in a medium bowl. Set aside.
  • Step 3
    Cream butter and sugars in the stand of an electric mixer or beat by hand. Once creamy, beat in egg and extracts.
  • Step 4
    Working in batches, add the flour mixture to wet mixture, scraping down sides of bowl if needed. Once all the flour has been fully incorporated, fold in orange zest.
  • Step 5
    Bake for 10 minutes until cookies are just barely done (they are best slightly underbaked).
