orange "zookies"
These zesty little cookies (hence the name) are perfect for dessert or an after school snack. After they've cooled, place vanilla ice cream in between two and make a sandwich. Ingredients
- 2 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- - pinch of salt
- 1 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 - egg
- 1/2 teaspoon pure orange extract
- 1 teaspoon vanilla
- - zest of 2 medium oranges (~ 1 tbsp)
How To Make orange "zookies"

Step 1Pre-heat oven to 350 degrees.

Step 2Sift flour, baking soda and salt in a medium bowl. Set aside.

Step 3Cream butter and sugars in the stand of an electric mixer or beat by hand. Once creamy, beat in egg and extracts.

Step 4Working in batches, add the flour mixture to wet mixture, scraping down sides of bowl if needed. Once all the flour has been fully incorporated, fold in orange zest.

Step 5Bake for 10 minutes until cookies are just barely done (they are best slightly underbaked).
