orange ricotta cookies
Went to make Small Batch Lemon Ricotta Cookies and realized that I did not have a lemon. Substituted orange. Great choice.

Ingredients
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 cup sugar
- 1/3 cup butter, softened
- 1 teaspoon orange zest
- 1/2 cup whole milk ricotta
- 1 large egg
- 1 tablespoon orange juice, fresh
- GLAZE
- 1 cup powdered sugar
- 2 tablespoons orange juice
- 1 teaspoon orange zest
How To Make orange ricotta cookies

Step 1Line baking sheets with parchment paper.

Step 2In medium bowl, whisk together flour and baking powder. Set aside.

Step 3Beat together sugar, butter and 1 teaspoon of orange zest until light and fluffy.

Step 4Beat in ricotta, egg and 1 tablespoon of orange juice until well combined.

Step 5Add in the flour mixture and mix until combined.

Step 6Cover the dough and refrigerate for at least 2 hours.

Step 7Preheat oven to 350 degrees.

Step 8Measure 1 tablespoon batter and roll into a ball. Place on parchment lined cookie sheet with 2 inches between.

Step 9Bake for 12-14 minutes.

Step 10Cool 5 minutes on cookie sheet, transfer to wire rack to cool completely.

Step 11Make Glaze: Whisk together powdered sugar, orange zest and juice.

Step 12Drizzle glaze over the cooled cookies.
