Makes 5 dozen cookies
Ingredients
- 1 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup butter
- 2/3 cup sugar
- 1 large egg
- 1/2 cup frozen orange juice concentrate, thawed and undiluted
- 1 cup oats, quick cooking
- 3/4 cup raisins
- - for a little more citrus flavor you could add grated orange zest
How To Make orange oatmeal cookies

Step 1Preheat oven to 350 degrees. Lightly grease baking sheets.

Step 2Sift together flour, baking soda, cinnamon and salt; set aside. Cream butter; gradually add sugar and beat until mixture is light and fluffy. Add egg and beat well.

Step 3Add orange juice concentrate, 1 tablespoon at a time, alternating with any dry ingredient, beating well after each addition. Fold in oats and raisins.

Step 4Drop by teaspoonfuls onto prepared baking sheets. Bake 10 to 12 minutes, or until lightly browned.
