These aren't just oatmeal cookies, the orange juice gives it a little citrus flavor for a great combination.

Ingredients

  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 2/3 cup sugar
  • 1 large egg
  • 1/2 cup frozen orange juice concentrate, thawed and undiluted
  • 1 cup oats, quick cooking
  • 3/4 cup raisins
  • - for a little more citrus flavor you could add grated orange zest

How To Make orange oatmeal cookies

  • Step 1
    Preheat oven to 350 degrees. Lightly grease baking sheets.
  • Step 2
    Sift together flour, baking soda, cinnamon and salt; set aside. Cream butter; gradually add sugar and beat until mixture is light and fluffy. Add egg and beat well.
  • Step 3
    Add orange juice concentrate, 1 tablespoon at a time, alternating with any dry ingredient, beating well after each addition. Fold in oats and raisins.
  • Step 4
    Drop by teaspoonfuls onto prepared baking sheets. Bake 10 to 12 minutes, or until lightly browned.
