It seems we've all been in the position of "between paychecks" and the children tell you (usually around 10pm) that they need something for the morning school bake sale. At least, this happens to me all the time. So, on the last call for bake sale items, I took what I had in the kitchen and whipped up a batch of cookies. WHOA!!!! To my surprize, these sold first, had tons of requests for more, and now this recipe is a staple that even the children can make. Feel free to change the juice (lemon,lime, peppermint extract,cherry, pineapple etc.) to fit the or any occassion. Be creative!

Ingredients
- 1/2 cup (1 stick) butter, softened
- 1 cup sugar
- 2 tablespoons orange juice concentrate
- 2 cups flour
How To Make orange crispies

Step 1Preheat oven to 350-degrees F.

Step 2Cream butter, sugar, and orange concentrate in a medium bowl. Slowly stir in flour and mix until well-blended. Drop by teaspoonfuls onto cookie sheets.

Step 3Bake for 12 - 15 minutes or until light golden brown. Cool on wire rakcs. Makes 3 dozen cookies.
