orange coconut chews

This is an awesome recipe from Jean Pare...I made these for 2 occasions this weekend and both times they were gobbled up fast and recipe requested...I did change things up a bit and made a different frosting...here is my version...enjoy!! Sorry..i didn't take a pic even after making it twice in one weekend!!

Ingredients
- 1/2 cup butter
- 1 large egg, fork beaten
- 1 cup brown sugar , packed....i used organic coconut sugar
- 1 cup chopped dates
- 1 cup unsweetend coconut
- 2 teaspoons orange zest
- 1 teaspoon vanilla extract
- 1/2 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
How To Make orange coconut chews

Step 1Melt butter in a large saucepan over low heat ...add the next 6 ingredients. Mix really well. Mix together the flour, salt and baking powder. Add to coconut mixture and mix well. Put into a greased 8 x 8 pan and bake at 350 for 30 mins.

Step 2Cool and frost with your favorite frosting or use the recipe below.

Step 3Frosting: 1 1/2 cups of icing sugar 2 tbsps softened butter 1 1/2 tbsps of frozen concentrated orange juice thawed. Beat well and frost cooled bars.
