orange cardamom cookies

I found this recipe some time ago and just got around to making it today. These cookies are really good, would be perfect with a cup of English tea. I changed it just a bit by adding more vanilla. The original recipe also said to flatten which I did and press with a fork ( like peanut butter cookies which I did not do) I also added the icing to mine. If you like Cardamom you will love these!!

Ingredients

  • 1/2 cup plus one tablespoon butter
  • 1 1/4 teaspoons cardamon, ground
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange rind, or rind from 1/2 orange
  • 1 cup firmly packed brown sugar
  • 1 large egg
  • 2 cups flour sifted
  • 1 teaspoon crea of tartar
  • - pinch of salt

How To Make orange cardamom cookies

  • Step 1
    Beat butter in a medium bowl until light and fluffy. add cardamom, soda, and pinch of salt and mix well.
  • Step 2
    gradually add the vanilla, orange rind and brown sugar. beat until smooth
  • Step 3
    Add egg and beat until well combined. fold in combined sifted flour and cream of tartar. Mix to form a soft dough
  • Step 4
    Roll mixture into a walnut sized balls and place on a greased cookie sheet, lightly flatten each ball
  • Step 5
    Bake at 350 degrees for 12-14 minutes cool on a wire rack
  • Step 6
    You can leave these plain or dust with powdered sugar. I frosted mine with 1 cup of powdered sugar that I mixed 1 tablespoon of Chai flavored sugar and just enough cream to make icing consistency.
