Ingredients

  • 100 grams cornflour
  • 100 grams riceflour
  • 80 grams caster sugar
  • 100 grams butter cut into cubes
  • 1 - juice of small lime
  • 1 - grated zest of a orange

How To Make orange and lime shortbread

  • Step 1
    preheat oven to 200c/400f gas mark 6, grease baking tray
  • Step 2
    place cornflour, riceflour sugar in food processor and blend. add butter untill you have fine breadcrumbs
  • Step 3
    add lime juice, orange zest and mix well, turn out and kneed together. roll mixture using a little cornflour, using a 6cm cookie cutter, cut out cookies, bake for 10-12 mins, dust with icing sugar
