orange and chocolate meringue kisses

This was an experiment to use up some egg whites left over from Christmas cookie baking - I love orange and chocolate together. I did not want to make them too colorful, but more coloring can be added if desired.

Ingredients

  • 2 egg whites
  • 1/8 teaspoon salt
  • 1/4 teaspoon cream of tarter
  • 1/3 - 1/2 cup ultra-fine sugar
  • 1/4 teaspoon orange extract
  • 1/2 teaspoon orange rind, grated
  • drops of red and yellow food color
  • 1/4 cup mini chocolate chips

How To Make orange and chocolate meringue kisses

  • Step 1
    Preheat oven to 200ºF.
  • Step 2
    In a glass or metal bowl, whip the egg whites until they're frothy. Add salt and cream of tartar
  • Step 3
    Add sugar, one tablespoon at a time, until stiff peaks form and the meringue looks glossy.
  • Step 4
    Add the grated orange peel and a few drops of food color until it looks slightly orange. (If the color is too pink, you can always call them Blood Orange and Chocolate Meringue Kisses!)
  • Step 5
    Add mini-chocolate chips.
  • Step 6
    Scoop into a zip lock bag. Cut off the corner and squeeze kisses onto 2 parchment covered cookie sheets.
  • Step 7
    Bake in oven for 2 hours. Remove and let cool on cookie sheets.
