Ingredients
- 1/2 cup shortening
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 - egg
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 cup crushed pineapple , drained, reserve 3 tablespoons juice for icing
- 2/3 cup chopped walnuts
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- ICING:
- 1 1/2 cups powdered sugar
- 3 tablespoons pineapple juice

Step 1Preheat oven to 350. Cream shortening and sugars together. Add egg and mix well. Add dry ingredients and mix well Add drained pineapple and mix well. Add nuts and flavoring, mix well. Drop by spoonful onto greased baking sheet. Bake for 15-20 minutes.

Step 2Cool cookies on wire racks. Mix powdered sugar and reserved pineapple juice to make icing. Drizzle icing on cooled cookies.
