oatmeal surprise cookies
These are no ordinary oatmeal cookie. They actually have a little protein in them, and are made with brown rice flour for some added health value. But don't let that scare you, because these are still full of scrumptious flavor. Each cookie surprises you with a pop of cranberry, sweetness of a raisin, and chocolate in every bite.

Ingredients
- 1 3/4 cups brown rice flour
- 1 cup rolled oats
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3 tablespoons chocolate-flavored whey protein powder
- 1 cup butter, room temperature
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon lemon juice
- 2 - eggs
- 1/2 cup golden raisins and dried cranberries
- 1/2 cup chocolate chips
- 1/4 cup chopped walnuts
How To Make oatmeal surprise cookies

Step 1Preheat oven to 350 degrees. Prepare cookie sheet with parchment paper.

Step 2Combine flour, oats, cinnamon, salt, protein powder and baking soda in medium bowl, blend, and set aside.

Step 3In a large bowl, cream the sugars and the butter together. Add the eggs, lemon juice and vanilla.

Step 4Stir in the dry ingredients with the wet until well blended. Add the raisins, cranberries, chocolate chips and walnuts.

Step 5Form balls approximately 1 inch in diameter and place on cookie sheet. Bake for 10-12 minutes. Cool on wire rack, and serve when ready.
