I like oatmeal in baked goods, especially cakes and cookies. Here is a recipe that was handed to me from a dear friend. What made it my own was substituting butterscotch chips for raisins. They come out thin and crispy and they don't last long around my house. I hope you enjoy them as well.

Ingredients

all purpose flour
1 c
butter
1 c
brown sugar, firmly packed
1/2 c
sugar
3 tsp
water
1 tsp
ground allspice
1 tsp
vanilla extract
1 tsp
salt
1
egg
1/2 tsp
baking soda
3 c
quick oats (uncooked)
2 c
butterscotch chips
3/4 c
chopped walnuts (optional)

How to Make Oatmeal Scotchies

Step-by-Step

  • 1Preheat oven to 350. Grease cookie sheet(s) and set aside
  • 2In a large mixing bowl, measure out the first 10 ingredients and mix by hand till thoroughly blended. Then fold in the oats and butterscotch chips with a spoon.
  • 3drop dough by heaping spoonfull onto greased cookie sheet about 2" apart. Bake in preheated oven for 12 minutes or till golden.
  • 4carefully cool on a wire rack. Make sure to regrease the cookie sheet each time you use it.
