oatmeal scotchies

I like oatmeal in baked goods, especially cakes and cookies. Here is a recipe that was handed to me from a dear friend. What made it my own was substituting butterscotch chips for raisins. They come out thin and crispy and they don't last long around my house. I hope you enjoy them as well.

Ingredients

  • 1 cup all purpose flour
  • 1 cup butter
  • 1 cup brown sugar, firmly packed
  • 1/2 cup sugar
  • 3 teaspoons water
  • 1 teaspoon ground allspice
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 1 - egg
  • 1/2 teaspoon baking soda
  • 3 cups quick oats (uncooked)
  • 2 cups butterscotch chips
  • 3/4 cup chopped walnuts (optional)

How To Make oatmeal scotchies

  • Step 1
    Preheat oven to 350. Grease cookie sheet(s) and set aside
  • Step 2
    In a large mixing bowl, measure out the first 10 ingredients and mix by hand till thoroughly blended. Then fold in the oats and butterscotch chips with a spoon.
  • Step 3
    drop dough by heaping spoonfull onto greased cookie sheet about 2" apart. Bake in preheated oven for 12 minutes or till golden.
  • Step 4
    carefully cool on a wire rack. Make sure to regrease the cookie sheet each time you use it.
