oatmeal scotchies
I like oatmeal in baked goods, especially cakes and cookies. Here is a recipe that was handed to me from a dear friend. What made it my own was substituting butterscotch chips for raisins. They come out thin and crispy and they don't last long around my house. I hope you enjoy them as well.

Ingredients
- 1 cup all purpose flour
- 1 cup butter
- 1 cup brown sugar, firmly packed
- 1/2 cup sugar
- 3 teaspoons water
- 1 teaspoon ground allspice
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 1 - egg
- 1/2 teaspoon baking soda
- 3 cups quick oats (uncooked)
- 2 cups butterscotch chips
- 3/4 cup chopped walnuts (optional)
How To Make oatmeal scotchies

Step 1Preheat oven to 350. Grease cookie sheet(s) and set aside

Step 2In a large mixing bowl, measure out the first 10 ingredients and mix by hand till thoroughly blended. Then fold in the oats and butterscotch chips with a spoon.

Step 3drop dough by heaping spoonfull onto greased cookie sheet about 2" apart. Bake in preheated oven for 12 minutes or till golden.

Step 4carefully cool on a wire rack. Make sure to regrease the cookie sheet each time you use it.
