I had a butter yellow cake mix I needed to use and a small amount of oats taking up space in my pantry. So, I decided to make these oatmeal cookies. They turned out wonderful. I'm going to freeze them for when I need a quick treat for a pot luck or as a sweet snack. They're mighty tasty and I would imagine they'd be good with just a yellow cake or even a white cake mix.Enjoy!

Ingredients

  • 1 - 15.25 ounces betty crocker supreme butter recipe yellow cake mix
  • 1 1/2 cups old fashioned oats
  • 3/4 cup flour
  • 2 teaspoons cinnamon
  • 1/2 cup packed brown sugar
  • 2 - eggs
  • 1 cup butter, melted
  • 1 teaspoon vanilla
  • 1 cup raisins
  • 1/2 cup each - chopped walnuts and chopped pecans

How To Make ~ oatmeal ~ raisin ~ nut cookies ~

  • Step 1
    Preheat oven to 375 degree F. In a bowl, mix together the cake mix, oats, flour and cinnamon. Set aside. Measure our 1 cup of raisins and pour hot water over them and let set while mixing batter. Drain well.
  • Step 2
    In another bowl, whisk together the eggs, brown sugar and pour into the cake mixture. Pour in the melted butter and stir until thoroughly blended. Stir in the raisins and nuts.
  • Step 3
    Spray baking sheet with bakers joy or grease and drop batter by tablespoonfuls on prepared sheet, about 2 inches apart. Bake for 12 - 15 minutes or until golden on the bottom. I always take mine out before too dark. Finish cooling on racks.Enjoy!
