The key to this cookie is be sure and soak the raisins and to refrigerate. They are by far the best oatmeal raisin cookie I have ever had.

Ingredients

  • 1 c
    raisins soaked in 1 cup warm water for at least 10 minutes
  • 2 c
    flour
  • 1 tsp
    salt
  • 1 tsp
    cinnamon
  • 1 c
    butter, room temperature
  • 1 c
    sugar
  • 1 c
    brown sugar
  • 2
    eggs
  • 2 c
    oats, quick cooking
  • 1 c
    chopped pecans (optional)

How to Make Oatmeal Raisin Cookies

Step-by-Step

  1. In bowl combine dry ingredients and set aside.
  2. In separate bowl combine sugars and butter. Add eggs and mix until creamy.
  3. Add dry ingredients and oatmeal, raisins and nuts.
  4. After thoroughly combining, place in refrigerator for at least 1 hour or even overnight.
  5. Bake at 375 degrees for 7-9 minutes.
