Classic Oatmeal Raisin Cookies from "Advanced Bread and Pastry; A Professional Approach"

  • 4 1/4 oz
  • 9 oz
    brown sugar
  • 2 oz
  • 1 1/2 tsp
    vanilla extract
  • 6 1/4 oz
    bread flour
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
  • 5 1/4 oz
    rolled oats
  • 4 1/2 oz

How to Make Oatmeal Raisin Cookie


  1. Cream butter and the sugar on medium speed untill mixed throughly, but not fluffy.
  2. Gradually add the eggs and vanilla.
  3. Combine the dry ingredients and add these to the bowl; mix to 50% incorperation.
  4. Add the raisins and the oats and mix until incorperated.
  5. Using a cookie scoop, drop cookies onto a parchment lined sheet an, and bake at 350F in a convection oven for 12 to 15 minutes.
