oatmeal everything cookies

I came up with this recipe when I looked through my baking drawer and saw small amounts of different cookie "add-ins". They travel well and were a big hit when I sent them to a soldier friend in Afghanistan.

Ingredients

  • 1 cup margarine or butter, softened
  • 1 cup brown sugar, firmly packed
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups quick cooking oats
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup golden raisins
  • 1/2 cup dried cranberries
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut, flaked

How To Make oatmeal everything cookies

  • Step 1
    Beat margarine, sugars, eggs and vanilla for 5 minutes.
  • Step 2
    Combine dry ingredients, add slowly to creamed mixture. Stir in fruits, chips and nuts.
  • Step 3
    Drop by teaspoons onto ungreased baking sheets. Bake at 350 degrees for 12-14 minutes. Cool on racks. Makes 4 1/2 dozen.
  • Step 4
    NOTES: You can use any favorite combination of chips, dried fruit, nuts and/or coconut in these cookies, as long as the total amount adds up to 2 1/2 cups.
