The recipe directions I have written, I left out the walnuts. They are optional, and you can decide if you want them or not.

Blue Ribbon Recipe

These are not your run-of-the-mill oatmeal cookies. They're thin and chewy. Creaming both brown sugar and white sugar with the butter adds nice flavor. If you opt to add the nuts, they do add a touch of crunch and nutty flavor. Slightly rich, these oatmeal crisps are made with ingredients you probably have in your pantry.

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar, firmly packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups rolled oats
  • 1/2 cup chopped walnuts (optional)

Make sure to leave room between the balls of dough. Since they do not have baking powder, they spread in the baking process.
  • Cream butter and sugars.
    Step 1
    Cream butter, brown sugar, and granulated sugar.
  • Add eggs and vanilla.
    Step 2
    Add eggs and vanilla, beat well.
  • Mix flour, salt, and baking soda.
    Step 3

  • Add flour mixture a little at a time to the butter.

  • Stir in oats.

    Add oats and mix well.
  • Add nuts if using.

    Add walnuts if you are using them at this time.
  • Chill dough for an hour.

    Chill the dough for about an hour.
  • Scoop dough into tablespoon balls.
    Step 8
    Preheat oven to 350 degrees F. Scoop out 1 Tbsp of dough. Place the dough on a parchment-lined baking sheet.
  • Bake for 10 minutes or until browned.
    Step 9
    Bake in the preheated oven for 10 minutes or until slightly brown.
  • Place on a rack to cool.
    Step 10
    Place on rack to cool, then eat.
