oatmeal cranberry cookies
I adapted several recipes and came up with this, my family in the states loved these, and I made them today, 27 May 2022 here in Thailand, and they are a hit with the family. The photos shown are from when I was in the states.

Makes 30 cookies
Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup butter, softened
- 1 3/4 cups brown sugar, packed
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups quick cooking rolled oats
- 2 1/2 cups dried cranberries
How To Make oatmeal cranberry cookies

Step 1Preheat your oven to 180° C (350° F). Line two baking sheets with parchment paper or lightly grease with butter.

Step 2In a mixing bowl, add the flour, baking powder, salt, cinnamon, and nutmeg. Whisk together then set aside.

Step 3In another mixing bowl add the butter and sugar and cream together. Add the eggs and vanilla, and mix together.

Step 4Add the flour mixture to the wet mixture and mix together until well combined.

Step 5Add the oats and cranberries and mix together until mixed throughout the cookie dough.

Step 6Drop by heaping tablespoons onto the prepared baking sheet.

Step 7Bake for 13-15 minutes or until the cookies are lightly browned around the edges. Remove from oven and allow to cool on the sheet for 3-5 minutes then remove to a wire rack to cool completely.
