These are VERY good and healthy. I have used different flavors of extract as well and you could also use walnuts or pecans. You can also use 2/3 cup packed dark brown sugar in place of the Splenda mix.

- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/3 cup vegetable oil
- 5 tablespoons Splenda brand brown sugar mix
- 1 large egg
- 1 teaspoon maple extract
- 1/2 cup rolled oats (not quick cooking)
- 1/2 cup craisins
- 1/4 cup chopped hazelnuts

Step 1Pre-heat oven to 350 degrees. In a medium bowl whisk together the flours and baking powder, set aside

Step 2In a large bowl whisk together the oil, brown sugar, egg, and extract. Add flour mixture and stir to combine, mix in oats and craisins

Step 3Using 2 tablespoons of dough per cookie, place on baking sheet lined with parchment paper, 1.5 inches apart. Bake until lightly browned, about 15 minutes.

Step 4Cool 5 minutes. These may be stored in an air tight container up to 5 days.
