These are VERY good and healthy. I have used different flavors of extract as well and you could also use walnuts or pecans. You can also use 2/3 cup packed dark brown sugar in place of the Splenda mix.

Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/3 cup vegetable oil
  • 5 tablespoons Splenda brand brown sugar mix
  • 1 large egg
  • 1 teaspoon maple extract
  • 1/2 cup rolled oats (not quick cooking)
  • 1/2 cup craisins
  • 1/4 cup chopped hazelnuts

How To Make oatmeal cookies

  • Step 1
    Pre-heat oven to 350 degrees. In a medium bowl whisk together the flours and baking powder, set aside
  • Step 2
    In a large bowl whisk together the oil, brown sugar, egg, and extract. Add flour mixture and stir to combine, mix in oats and craisins
  • Step 3
    Using 2 tablespoons of dough per cookie, place on baking sheet lined with parchment paper, 1.5 inches apart. Bake until lightly browned, about 15 minutes.
  • Step 4
    Cool 5 minutes. These may be stored in an air tight container up to 5 days.
