oatmeal coconut cookies
Oatmeal and Coconut is such a great combination. This is a new cookie I've been making and I make them especially to the coconut lovers I know which includes myself. If I am feeling fancy, I will drizzle melted dark or milk chocolate on top! They're very pretty wrapped in cellophane bags with ribbon, how I usually gift my cookies or sweet treats!

Ingredients
- 1 cup sugar
- 1 cup brown sugar
- 2 - eggs
- 2 teaspoons pure vanilla extract
- 2 sticks butter at room temperature
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/2 cups all purpose flour
- 1 cup shredded sweetened coconut
- 1 cup quick cooking oats
- - m&ms (optional)
- - semi sweet mini chocolate chips (optional)
- - toffee bits (optional)
- - white chocolate chips (optional)
How To Make oatmeal coconut cookies

Step 1Preheat the oven to 350 degrees. In a large bowl cream together the sugar, eggs, butter and vanilla until light and fluffy. Add the dry ingredients and mix until combined. Drop by tablespoonfuls onto a parchment paper lined baking sheet. Bake at 350 degrees for 9-11 minutes, until the cookies are set but not overly browned (bake a few minutes longer for a crispier version).

Step 2NOTE: You can stir in m&ms or mini semi sweet or white chocolate chips. I have also added toffee as well to the mix. Enjoy!
