Oatmeal and Coconut is such a great combination. This is a new cookie I've been making and I make them especially to the coconut lovers I know which includes myself. If I am feeling fancy, I will drizzle melted dark or milk chocolate on top! They're very pretty wrapped in cellophane bags with ribbon, how I usually gift my cookies or sweet treats!

Ingredients For oatmeal coconut cookies

  • 1 c
    sugar
  • 1 c
    brown sugar
  • 2
    eggs
  • 2 tsp
    pure vanilla extract
  • 2 stick
    butter at room temperature
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 1/2 c
    all purpose flour
  • 1 c
    shredded sweetened coconut
  • 1 c
    quick cooking oats
  • m&ms (optional)
  • semi sweet mini chocolate chips (optional)
  • toffee bits (optional)
  • white chocolate chips (optional)

How To Make oatmeal coconut cookies

    Preheat the oven to 350 degrees. In a large bowl cream together the sugar, eggs, butter and vanilla until light and fluffy. Add the dry ingredients and mix until combined. Drop by tablespoonfuls onto a parchment paper lined baking sheet. Bake at 350 degrees for 9-11 minutes, until the cookies are set but not overly browned (bake a few minutes longer for a crispier version).

    NOTE: You can stir in m&ms or mini semi sweet or white chocolate chips. I have also added toffee as well to the mix. Enjoy!
