oatmeal chocolate chip cookies
This is very similar to my Peanut Butter Oatmeal Cookies but sans the Peanut Butter. These cookies are great and sometimes I will add about 2 cups of raisins to the mix. Enjoy!

Ingredients
- 2 cups unsalted butter, room temperature
- 2 cups granulated sugar
- 2 cups light brown sugar
- 4 - eggs
- 2 teaspoons pure vanilla extract
- 5 cups blended quick cooking oats
- 4 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 24 ounces semi sweet chocolate chips
- 8 ounces chocolate bar grated
- 3 cups chopped nuts (your choice, optional)
- 2 cups raisins (optional)
How To Make oatmeal chocolate chip cookies

Step 1Preheat oven to 375 degrees. In a mixer, cream butter and sugars until light and fluffy. Add eggs one at a time, mixing until blended. Add vanilla.

Step 2Place 5 cups of oats in a blender or food processor. Blend until oatmeal resembles a fine powder (almost flour-like).

Step 3Put blended oats to a large bowl. Sift in flour, baking powder, baking soda and salt. Mix all dry ingredients thoroughly.

Step 4Working in batches, add dry ingredients to mixer on low speed. Mix until flour is just incorporated, scraping down sides of mixer as needed. Do not overmix.

Step 5Add chocolate chips, grated Hershey bar, nuts and raisins, if using. Mix well.

Step 6Roll batter into 2-inch balls and place on a cookie sheet 2 inches apart. Flatten slightly.

Step 7Bake cookies for 10 minutes or until golden brown. Remove from sheet and place on wire rack to cool.

Step 8Note: To have a consistent size cookie, before rolling, first scoop dough with cookie scooper, then roll dough.
