Jim loves oatmeal chocolate chip cookies, but sometimes I just don't have time for cookies. Then my mother suggested this recipe. In less than 1/2 hour I can have a pan of then bars made. Best part is Jim prefers these to the cookies.

Ingredients

  • 1 c
    butter room temperature
  • 1 1/4 c
    brown sugar packed
  • 3/4 c
    white sugar
  • 2
    eggs
  • 1 tsp
    pure vanilla
  • 2 c
    flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    oatmeal, uncooked
  • 1 c
    chocolate chips
  • 1/2 c
    butterscotch chips

How to Make Oatmeal Chocolate Chip Bars

Step-by-Step

  1. Cream butter and sugars together until fluffy. Add eggs and vanilla. Beat.
  2. Combine flour, baking powder and salt. Add to creamed mixture just until blended. Stir in oatmeal annd chocolate chips.
  3. Spread in a greased 10X15 baking pan. I grease my hands and pat it into place.
  4. Bake for 20 minutes in a 375 degree oven. Depending on your oven check them at about 15 minutes. Do not over bake them or they will become too hard when they cool.
  5. Cut them while warm.
