My grandmother always had these on hand. Similar to Almond Biscotti bars.

  • 1 c
  • 1 tsp
  • 3 1/2 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1 c
    diced almonds
  • 1 tsp
    almond extract

How to Make Norwegian Rusks


  1. Beat eggs, sugar and oil together. Add sifted flour, baking powder and salt. Mix in almonds and extract.

    Roll into three narrow rolls. Place on greased baking sheet.

    Bake at 350 for 30 to 35 minutes.

    Remove from oven, slice into 1/2 inch slices and return to oven. Brown for 20 to 25 minutes.
