norma's soft apple cider cookies
With the Holiday's getting closer; I am geting out my recipes that I have made for years. My family, friends and neighbors love when I had them a plate of different cookies during the Holidays. It is just a joy to see how people react to my plate of cookies. This is the greatest time of the year.

Makes 4 dozen
Ingredients
- 1 cup firmly packed light brown sugar
- 1/2 cup margarine or butter, softened
- 1/2 cup apple cider
- 1/2 cup egg beaters, real egg product
- 2 1/4 cups all purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 medium apples, peeled and diced (about 1 1/2 cups)
- 3/4 cup chopped almonds
- - glaze:
- 1 cup powdered sugar
- 2 tablespoons apple cider
How To Make norma's soft apple cider cookies

Step 1Preheat oven to 375 and lightly greese baking sheets. Set aside.

Step 2In a large mixing bowl, add sugar and margarine or butter and mix at medium speed until creamy.

Step 3Add cider and egg beaters and beat until smooth.

Step 4At low speed, gradually blend in flour, cinnamon, baking soda and salt until well blended. Stir in apples and almonds.

Step 5Drop dough by tablespoonsfull, 2 inches apart on prepared cooking sheets.

Step 6Place in oven and bake for 10 to 12 minutes or until golden brown.

Step 7Remove from oven and place cookies on wire rack to cool.

Step 8When cookies are cool, drizzle with cider glaze.
