Ingredients
- DRY INGREDIENTS:
- 8 ounces unsweetened, small flake coconut
- 3/4 cup splena for baking
- 1/4 cup erythritol (buy online, or at health food store)
- 1/4 teaspoon salt (optional)
- 4 tablespoons soy flour
- WET INGREDIENTS
- 4 - egg whites, slightly beaten
- 1/2 teaspoon almond or vanilla extract
- 1/2 teaspoon liquid stevia (buy online or at healthfood store)
- 1 tablespoon coconut oil
How To Make no sugar, lo-carb macaroon cookies

Step 1Preheat ovent to 325 degrees.

Step 2Combne dry ingredients and whisk together. In a separate bowl, whisk eggs and add wet ingredients. Add wet & dry ingredients together and mix thoroughly. Shape into 1 inch balls, being sure they are all the same size so they bake evenly. On parchment or silpat, bake 20-25 minutes, rotating trays half-way thru cooking time. Makes about 2 1/2 dozen cookies. Yum!
