Ingredients

  • DRY INGREDIENTS:

  • 8 oz
    unsweetened, small flake coconut
  • 3/4 c
    splena for baking
  • 1/4 c
    erythritol (buy online, or at health food store)
  • 1/4 tsp
    salt (optional)
  • 4 Tbsp
    soy flour
  • WET INGREDIENTS

  • 4
    egg whites, slightly beaten
  • 1/2 tsp
    almond or vanilla extract
  • 1/2 tsp
    liquid stevia (buy online or at healthfood store)
  • 1 Tbsp
    coconut oil

How to Make No Sugar, Lo-Carb Macaroon Cookies

Step-by-Step

  1. Preheat ovent to 325 degrees.
  2. Combne dry ingredients and whisk together. In a separate bowl, whisk eggs and add wet ingredients. Add wet & dry ingredients together and mix thoroughly. Shape into 1 inch balls, being sure they are all the same size so they bake evenly. On parchment or silpat, bake 20-25 minutes, rotating trays half-way thru cooking time. Makes about 2 1/2 dozen cookies. Yum!
