Ingredients

  • DRY INGREDIENTS:
  • 8 ounces unsweetened, small flake coconut
  • 3/4 cup splena for baking
  • 1/4 cup erythritol (buy online, or at health food store)
  • 1/4 teaspoon salt (optional)
  • 4 tablespoons soy flour
  • WET INGREDIENTS
  • 4 - egg whites, slightly beaten
  • 1/2 teaspoon almond or vanilla extract
  • 1/2 teaspoon liquid stevia (buy online or at healthfood store)
  • 1 tablespoon coconut oil

How To Make no sugar, lo-carb macaroon cookies

  • Step 1
    Preheat ovent to 325 degrees.
  • Step 2
    Combne dry ingredients and whisk together. In a separate bowl, whisk eggs and add wet ingredients. Add wet & dry ingredients together and mix thoroughly. Shape into 1 inch balls, being sure they are all the same size so they bake evenly. On parchment or silpat, bake 20-25 minutes, rotating trays half-way thru cooking time. Makes about 2 1/2 dozen cookies. Yum!
