nistisimo cookies (spiced biscotti)

I came across this recipe while I was looking for nistisimo dessert to make without breaking the lenten fast. The were very easy and my family enjoyed them. Made some more yesterday even though Easter is over!

Ingredients
- 2 cups vegetable oil
- 1 3/4 cups sugar
- 1 cup brandy
- zest - 1 orange
- 1 1/2 teaspoons baking soda
- 3 teaspoons cinnamon
- 1/2 tablespoon ground cloves
- 1 tablespoon anise seed
- 1 cup chopped walnuts
- 6-7 cups all purpose flour
How To Make nistisimo cookies (spiced biscotti)

Step 1Beat the oil and the sugar. Add orange juice, brandy, orange zest, baking soda and spices. Mix well.

Step 2Gradually add flour and nuts. You might need more or less of the flour, just keep adding until the dough starts to form a ball and falls away from the side of the bowl.

Step 3Line a large baking tray with grease proof paper, place the dough in the center and with your hands level it out to fill the tray. If you find it sticking to you hands just wet them with a little oil. Without going all the way through, using the longest side, cut the dough into strips, turn the tray around and cut again, maybe 5 or 6 strips, you want finger length cookies. bake for 20 - 25 minutes, will be golden brown.

Step 4Remove from oven, cool slightly, cut all the way through, turn the cookies on their sides and return to the oven for toasting - 5-10 mins each side.
