Ingredients

  • 3/4 c
    sun-maid raisins
  • 3 Tbsp
    orange juice or orange flavor liqueur
  • 1/2 c
    butter or margarine at room temperature
  • 3/4 c
    granulated sugar
  • 1 Lg
    egg
  • 2 tsp
    grated orange peel
  • 1 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 1/2 c
    rolled oats
  • 8 oz
    vanilla or white chocolate chips
  • 1 tsp
    vegetable oil or shortening

How to Make " Night Before Christmas Cookies "

Step-by-Step

  1. Combine orange juice and raisins and let stand overnight in refrigerator
  2. Beat butter and sugar until fluffy. Beat in egg and orange peel. Pre heat oven to 350 degrees.
  3. Combine flour and baking soda,sir into butter mixture. Add raisins and any soaking liquid and oats mix well. Drop by rounded teaspoonfuls onto greased baking sheets, spacing 2 inches apart, flatten slightly. Bake at 350 degrees for 10-12 min. move to cooling racks cool completely.
  4. In small,deep bowl, microwave chocolate and oil 3-4 minutes on low power, stiring once. Let stand 2 minutes stir until smooth. Dip 1/3 of the cookie in chocolate, chill on waxed paper lined baking sheets until chocolate is firm. Makes 3 doz.
