Found this in a magazine and made it for my family for Christmas got rave reviews.

yield 3 dozen cookies

Ingredients

  • 3/4 cup sun-maid raisins
  • 3 tablespoons orange juice or orange flavor liqueur
  • 1/2 cup butter or margarine at room temperature
  • 3/4 cup granulated sugar
  • 1 Lg - egg
  • 2 teaspoons grated orange peel
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 cups rolled oats
  • 8 ounces vanilla or white chocolate chips
  • 1 teaspoon vegetable oil or shortening

How To Make " night before christmas cookies "

  • Step 1
    Combine orange juice and raisins and let stand overnight in refrigerator
  • Step 2
    Beat butter and sugar until fluffy. Beat in egg and orange peel. Pre heat oven to 350 degrees.
  • Step 3
    Combine flour and baking soda,sir into butter mixture. Add raisins and any soaking liquid and oats mix well. Drop by rounded teaspoonfuls onto greased baking sheets, spacing 2 inches apart, flatten slightly. Bake at 350 degrees for 10-12 min. move to cooling racks cool completely.
  • Step 4
    In small,deep bowl, microwave chocolate and oil 3-4 minutes on low power, stiring once. Let stand 2 minutes stir until smooth. Dip 1/3 of the cookie in chocolate, chill on waxed paper lined baking sheets until chocolate is firm. Makes 3 doz.
