Ingredients
- 3/4 cup sun-maid raisins
- 3 tablespoons orange juice or orange flavor liqueur
- 1/2 cup butter or margarine at room temperature
- 3/4 cup granulated sugar
- 1 Lg - egg
- 2 teaspoons grated orange peel
- 1 cup all purpose flour
- 1 teaspoon baking soda
- 1 1/2 cups rolled oats
- 8 ounces vanilla or white chocolate chips
- 1 teaspoon vegetable oil or shortening
How To Make " night before christmas cookies "

Step 1Combine orange juice and raisins and let stand overnight in refrigerator

Step 2Beat butter and sugar until fluffy. Beat in egg and orange peel. Pre heat oven to 350 degrees.

Step 3Combine flour and baking soda,sir into butter mixture. Add raisins and any soaking liquid and oats mix well. Drop by rounded teaspoonfuls onto greased baking sheets, spacing 2 inches apart, flatten slightly. Bake at 350 degrees for 10-12 min. move to cooling racks cool completely.

Step 4In small,deep bowl, microwave chocolate and oil 3-4 minutes on low power, stiring once. Let stand 2 minutes stir until smooth. Dip 1/3 of the cookie in chocolate, chill on waxed paper lined baking sheets until chocolate is firm. Makes 3 doz.
