my grams carrot cookies
My Gram always had 3 brown cookie jars with cookies in them at all times. We had more family and friends stop by just to grab a cookie. You never had to ask just walk in say hi and help yourself. This was one of her old stand bys. I've made these cookies with 1 cup canola oil instead of shortening and replace 1 cup of whole wheat white flour for a cup of white for a healthier version. The kids on the soccer team loved them.

Ingredients
- 1 cup shortening or canola oil
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 2 - eggs
- 1 cup mashed carrots
- 2 cups flour or a mix of whole wheat and white flour
- 2 teaspoons baking powder
- 1 1/8 teaspoons salt
- 1 cup flaked coconut
- ORANGE ICING
- 2 cups confectioners' sugar
- 1/4 cup orange juice, unsweetened
How To Make my grams carrot cookies

Step 1Mix sugar and shortening or canola oil. Stir in eggs, vanilla and carrots till blended.

Step 2Mix all dry ingredients together add to wet ingredients

Step 3scoop onto baking sheet and bake until light brown. About 10 minutes.

Step 4Mix in enough orange juice into confectioners sugar to make icing. Ice cookies let dry before storing.
