My Gram always had 3 brown cookie jars with cookies in them at all times. We had more family and friends stop by just to grab a cookie. You never had to ask just walk in say hi and help yourself. This was one of her old stand bys. I've made these cookies with 1 cup canola oil instead of shortening and replace 1 cup of whole wheat white flour for a cup of white for a healthier version. The kids on the soccer team loved them.

Ingredients

shortening or canola oil
3/4 c
sugar
1 tsp
vanilla extract

mashed carrots
2 c
flour or a mix of whole wheat and white flour

ORANGE ICING

confectioners' sugar

orange juice, unsweetened

How to Make My Grams Carrot Cookies

Step-by-Step

  • 1Mix sugar and shortening or canola oil. Stir in eggs, vanilla and carrots till blended.
  • 2Mix all dry ingredients together add to wet ingredients
  • 3scoop onto baking sheet and bake until light brown. About 10 minutes.
  • 4Mix in enough orange juice into confectioners sugar to make icing. Ice cookies let dry before storing.
