my fav lemon cookies
i love love LOVE this cookie. **NOTE** allow at least 2 hours for dough to freeze.

Ingredients
- 2 cups flour
- 1 cup confectioners' sugar
- 1 teaspoon coarse salt
- 1 1/2 tablespoons lemon zest
- 1 teaspoon fresh lemon juice
- 2 sticks butter, cut into pieces
- 2 - egg yolks
- 1/4 cup granulated sugar, for rolling

Step 1Recommended from experience: Assemble your ingredients first!

Step 2Mix flour, confec. sugar, salt and lemon zest until combined.

Step 3Mix in butter.

Step 4Add egg yolks and lemon juice; mix until dough is formed.

Step 5Divide dough in half and form each half into a log (1-1/2 " wide). Wrap in plastic and freeze until firm, 2 hours or more. (Will keep ok in freezer up to a month.)

Step 6Preheat oven to 350. Spray 2 baking sheets with cooking spray. Roll logs in granulated sugar to coat. Slice logs into 1/4" thick slices and arrange on baking sheets 1" apart.

Step 7Bake until cookies are golden brown around the edges, 12 to 15 minutes. Transfer cookies to wire racks to cool.
