my fav lemon cookies

i love love LOVE this cookie. **NOTE** allow at least 2 hours for dough to freeze.

Ingredients

  • 2 cups flour
  • 1 cup confectioners' sugar
  • 1 teaspoon coarse salt
  • 1 1/2 tablespoons lemon zest
  • 1 teaspoon fresh lemon juice
  • 2 sticks butter, cut into pieces
  • 2 - egg yolks
  • 1/4 cup granulated sugar, for rolling

How To Make my fav lemon cookies

  • Step 1
    Recommended from experience: Assemble your ingredients first!
  • Step 2
    Mix flour, confec. sugar, salt and lemon zest until combined.
  • Step 3
    Mix in butter.
  • Step 4
    Add egg yolks and lemon juice; mix until dough is formed.
  • Step 5
    Divide dough in half and form each half into a log (1-1/2 " wide). Wrap in plastic and freeze until firm, 2 hours or more. (Will keep ok in freezer up to a month.)
  • Step 6
    Preheat oven to 350. Spray 2 baking sheets with cooking spray. Roll logs in granulated sugar to coat. Slice logs into 1/4" thick slices and arrange on baking sheets 1" apart.
  • Step 7
    Bake until cookies are golden brown around the edges, 12 to 15 minutes. Transfer cookies to wire racks to cool.
