Ingredients

  • 2 c
    flour
  • 1 c
    confectioners' sugar
  • 1 tsp
    coarse salt
  • 1 1/2 Tbsp
    lemon zest
  • 1 tsp
    fresh lemon juice
  • 2 stick
    butter, cut into pieces
  • 2
    egg yolks
  • 1/4 c
    granulated sugar, for rolling

How to Make My FAV Lemon Cookies

Step-by-Step

  1. Recommended from experience: Assemble your ingredients first!
  2. Mix flour, confec. sugar, salt and lemon zest until combined.
  3. Mix in butter.
  4. Add egg yolks and lemon juice; mix until dough is formed.
  5. Divide dough in half and form each half into a log (1-1/2 " wide). Wrap in plastic and freeze until firm, 2 hours or more. (Will keep ok in freezer up to a month.)
  6. Preheat oven to 350. Spray 2 baking sheets with cooking spray. Roll logs in granulated sugar to coat. Slice logs into 1/4" thick slices and arrange on baking sheets 1" apart.
  7. Bake until cookies are golden brown around the edges, 12 to 15 minutes. Transfer cookies to wire racks to cool.
