my famous peanut butter cookies
Okay...maybe they're not famous...but don't tell my child care kids that. lol This is one of those recipes I have no idea where it originated, but I've had it 20+ yrs and I've tweaked it so many times, I think I can officially call it mine. :)

Ingredients
- 1/2 cup shortening, i use butter flavor crisco
- 1/2 cup butter, softened
- 1 cup peanut butter, i use creamy jif
- 1 cup sugar
- 1 cup brown sugar, i use dark
- 2 - eggs
- 2 teaspoons vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup raw sugar, for rolling in, if desired
- 1 - 11 ounces pkg milk chocolate chips, or dark or white

Step 1Preheat oven to 375.

Step 2Cream together shortening, butter, peanut butter, sugar and brown sugar. Add eggs and vanilla and mix well. Blend in flour, soda and salt. Stir in chips if desired.

Step 3Roll 1 1/2" balls and roll in raw sugar. (regular sugar can be used) Place on cookie sheet, using a something, whether a fork, potato masher, spatula etc press design into cookie. Bake at 350 for 10-12 minutes. Remove from pan and onto wire racks for cooling.

Step 4*In photo you can see I drizzled melted white chocolate over the cookie. They do not need the chocolate, its just a fun detail.
