my famous peanut butter cookies

Okay...maybe they're not famous...but don't tell my child care kids that. lol This is one of those recipes I have no idea where it originated, but I've had it 20+ yrs and I've tweaked it so many times, I think I can officially call it mine. :)

Ingredients

  • 1/2 cup shortening, i use butter flavor crisco
  • 1/2 cup butter, softened
  • 1 cup peanut butter, i use creamy jif
  • 1 cup sugar
  • 1 cup brown sugar, i use dark
  • 2 - eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup raw sugar, for rolling in, if desired
  • 1 - 11 ounces pkg milk chocolate chips, or dark or white

How To Make my famous peanut butter cookies

  • Step 1
    Preheat oven to 375.
  • Step 2
    Cream together shortening, butter, peanut butter, sugar and brown sugar. Add eggs and vanilla and mix well. Blend in flour, soda and salt. Stir in chips if desired.
  • Step 3
    Roll 1 1/2" balls and roll in raw sugar. (regular sugar can be used) Place on cookie sheet, using a something, whether a fork, potato masher, spatula etc press design into cookie. Bake at 350 for 10-12 minutes. Remove from pan and onto wire racks for cooling.
  • Step 4
    *In photo you can see I drizzled melted white chocolate over the cookie. They do not need the chocolate, its just a fun detail.
