my delicious fruitcake cookies

I found this recipe in a very old publication. I did not have all the ingredients called for, so I improvised and it turned out very pretty and tasted really good! As I am not a fan of fruitcake I was surprised how good these cookies turned out.

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 - egg
  • 1-1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 cups chopped, pitted dates
  • 1-1/2 cup extra-fancy fruitcake fruit mix, chopped
  • 1-1/2 cup coarsley chopped walnuts, toasted

How To Make my delicious fruitcake cookies

  • Step 1
    Cream butter and sugar. Add egg, mix well. Combine flour, baking soda, salt and cinnamon; gradually add to the creamed mixture and mix well.
  • Step 2
    Fold in fruits and nuts. Drop by rounded teaspoonfuls 2 inches apart on greased baking sheets.
  • Step 3
    Bake at 375 degrees for 8-10 minutes or until lightly browned. Cool in wire racks.
